"Fast" Food

I mentioned in my last post that we are fasting right now....we decided after some time with our Life Group to do a 21 day Daniel Fast. The Daniel Fast is not a liquid fast but its still pretty restricted. Basically it's eating vegan (no meat, no dairy, no animal products) plus no sugar, no caffiene, no processed foods, no white flours or grains. We are eating eggs and Rob is still drinking a morning cup of joe but other than that its fruits, vegetables and whole grains.

I wanted to share some recipes that are getting us through these few weeks as we attempt to declutter our systems and start our year with a clean slate focus on Christ and His will for our family!

Green Minestrone
Ingredients
2 cups whole wheat pasta (I used a mix of penne and large shells)
1/2 bag frozen green beans
1/2 bag frozen broc
1/2 bag frozen cauliflower-
1/2 bag frozen spinach-defrosted and squeezed dry
1 can cannelini beans (white, great northern) drained and rinsed
8-10 cups veggie stock
1 Onion-diced
2-3 cloves of garlic-minced
2-3 tablespoons olive oil
1 small can tomato paste
Salt, Pepper, Italian Seasoning Blend

In a large pot or dutch oven add your olive oil and heat on medium high. Add the diced onion and the garlic, stirring until translucent but not browned. Add the tomato paste and spinach and stir to heat. Add 8 cups veggie stock and season WELL with Italian Seasonings, salt and fresh cracked pepper(chicken would be fine if not fasting or vegetarian). In a large microwave safe bowl combine your green beans, broc and cauliflower and defrost for 5ish minutes, just long enough to get rid of some of the water. Remove and roughly chop to 1/2 inch-inch pcs. Add to the soup and bring to a boil. Add the pasta and cover for 15 minutes on medium-high heat. Check the pasta to be sure it's done and add the cannelini beans. Remove from heat and cover for an additional 10-15 minutes to let the flavors meld and the beans warm up. If needed add more veggie stock-mine was a great consistency with 8 cups...be sure to taste and add more salt and seasonings as needed! Serve with whole wheat crackers.

Ranch Chicken Noodle Soup

I have a confession. I can't follow a recipe to save my life. It's a good thing in cooking, I don't need a step by step guide when I cook, instead I just use recipes as inspiration and 9 times out of 10 I find myself winging it, making substitutions and adding flavor. Bad part-it makes it hard to share my "recipes" But I am going to try, this was so yummy and perfect fall comfort food!

Ranch Chicken Noodle Soup
Ingredients
3 poached chicken breasts-cleaned of all fat and cut into chunks
1 can chicken broth
around 6 cups of water
1 onion diced
2 cups baby carrots diced
3-4 celery stalks-diced with leaves (celert leaves=good)
1 can cream of chicken OR 1/2 cup heavy cream
2 bay leaves
1 teaspoon seasoned salt
1 tablespoon onion onion
1.5 tablespoon garlic garlic
fresh cracked pepper
1 packet dry ranch seasoning
1 package frozen homestyle egg noodles (I used yolk free to be healthier)

Directions
Poach chicken by adding raw defrosted chicken to warm water in a large pot. Bring water to a boil and then simmer until chicken is cooked through (15 minutesish). Remove from water, remove any fat or funky parts and cut into large chunks.

Dice onions, carrots and celery. In a large stock pot coat the bottom of the pn with 3-4 tablespoons of olive oil. Over medium high heat saute the veggies, adding the salt, onion onion, garlic garlic and fresh cracked pepper until starting to get golden color and onions are transluscent. Deglaze pan with 1 can chicken broth, scraping the bottom of the pan. Add 6 cups water and 2-3 tablespoons of chicken granules (or2 boullion cubes). ~You could just add several boxes of stock or broth but I didn't have any...water+boullion is fine~

Add chicken and stir in 1 can cream of chicken OR 1/2 cup of heavy cream. This gives the soup just a little more body and richness. Whisk in the dry ranch seasoning. Taste your broth and be sure its flavorful. If it is too salty add more water. This makes a BIG pot of soup!

I let this part of my soup simmer all day to really meld the flavors and cook the veggies down. I am sure 30-40 minutes would be fine though!

About 30 minutes before you are ready to eat bring the soup up to a boil. Add the frozen egg noodles and cook for 25-30 minutes. They will expand and be firm but not taste like raw dough when they are done. Return soup to low heat and eat it up!

Typing this out makes it seem WAY harder than it really is. I used the recipe below as my inspiration and I was pleased! I don't like chicken noodle soup but this was WAY better than a can or restaurant. I really think letting the veggies get some good color, deglazing the pan and a low long simmer make all the difference in the world!

Live from Oklahoma Cityyyyyyyyyyy

I am excited to share that I am going to be on live tv next week!



What I really want to do is throw up from nerves :) but I am genuinely excited. I have been a food tv watcher my entire life so I kind of get to pretend that I have my own cooking show for an entire 5 minutes.


i will pretend that I am paula deen...that will boost my self confidence!

So here's the deal, it's Monday at 11AM on the show "All About You" which is on local channel KSBI OK 52. I will be doing a 4-5 minute cooking demo on easy summer recipes featuring our AWESOME Tastefully Simple products. We will be celebrating National Panini Month which should be fun. I have a LOT of prep work to do and I need to get some timing practice in the next few days.



I know it might seem silly but I honestly feel like God is blessing my TS business and it reassures me that I am in the right spot. Sales is never an "easy" job but it's one of the most prevalent in our nation! How many people are in some sort of sales? We are all selling something! Heck, even bloggers are selling themselves to their readers!

To God be the GLORY for this super fun experience. I pray that anyone out there who is looking for a way to bring in extra income to their family or needs to experience Tastefully Simple in some way will be tuned in a watching. God can use ANYTHING to bring Glory to HIM!

Simple Womans Daybook

I have seen several of my blog friends post these and I think its a great easy way to keep your blog updated. So thanks to my friend Jess over at No Ordinary Piece of Clay for inspiring my post!

Outside my window... weeds, that need pulled!


I am thinking... that God continues to prove Himself faithful in providing for our needs even when things seem hard or tight.

I am thankful for... grace, forgiveness and mercy. And the next two weeks that I have with Max before Stella arrives.

From the learning room... we spent the morning at Barnes and Noble reading and playing.

From the kitchen...Taco Soup
Ingredients
1 lb Ground beef
I small onion finely diced
I green bell pepper-diced
1 Cup long grain rice-cooked to al dente in chicken stock
1 can beans
1 can diced tomatoes
1 can Rotel
4 cans water

Cook Rice to al dente subbing stock for water. Set aside. Use a small amount of oil to saute onion and bell pepper with Seasoned Salt, Pepper, Chili Powder, Ground Cumin and Tastefully Simple Fiesta Dip Mix. Add ground beef and cook completely. Drain extra grease. Add all remaining ingredients and simmer 20-30 minutes. Serve with crushed chips, sour cream or shredded cheese.

Saturday-Bridal Shower, maybe Saturday night church, pasta dinner with Team ArmyStrong

Sunday-Going to watch Team ArmyStrong run the relay marathon (Rob + My Army Wife Friends)

I am hoping...That our tax refund gets here soooooooooon.

I am hearing...Maxs breathing as he falls asleep.

Rob and I have really buckled down on our eating out and our budget. It is amazing how much money and food we used to waste (pre-Max, pre-very tight budget) We now spend an average of $250 per month for groceries...this month we spent $282 for the month. The best thing about working for Tastefully Simple is getting a great discount on our products. Rob likes to tell me that my cooking is so much better and more flavorful since we started with Tastefully Simple, and I try to not take offense to that!

In all reality it is so much better. It is healthier for us to eat at home and WAY cheaper. We still eat out on occasion, maybe once or twice on the weekends but we try really hard to utilize our groceries and meal plans to save money. Even though there are times when things seem unbearably tight, in all actuality we are incredibly blessed that God has always provided for our family. Until my two week meal plan is Ramen, Ramen, Ramen and more Ramen I think we are doing great.
